Finnish Mushroom Pie

Finns use a lot of mushrooms and many enjoy mushroom picking, so delicious mushroom pies are very popular vegetarian option. This crust works well for other pies as well, and there is no need to pre-bake the crust!
The Finnish forests have a lot of variety in mushrooms and many are excellent food. My favorite ones are normal yellow chantarelles and darker funnel chanterelles (wikipedia link), which can be picked until the snow arrives. Mushroom picking is great fun, once you find a few, you can find hundreds!
For this recipe you can use naturally also fresh mushrooms.

This delicious mushroom pie is easy and quick to make. You can also change the fillings and bake another pie, for example these fillings are popular pies in Finland:
½ cup / 1 stick / 100 g butter
1 ¼ cup all-purpose flour
1 teaspoon salt
1 egg
4 cups frozen mushrooms
1 leek
½ onion
2/3 cooking cream / heavy cream / creme fraiche
2 eggs
1 ½ cups emmental cheese, grated
1 teaspoon butter for frying
1 teaspoon salt
½ teaspoon thyme, black pepper and oregano
Mix the flour and salt
Add softened butter and egg, mix
Let the dough cool in fridge while you prepare the filling
Chop the leek and onion
Fry the leek and onion
Add mushrooms to the frying pan, fry until mushrooms don’t produce more liquid
Add salt and other spices, take the pan off the heat
Add eggs and cream, mix
Spread the dough to a baking pan e.g. round shaped pan, approx 10 inch / 26 cm, with your hands
Add the filling
Add grated cheese on top (optional)
Bake in 400 °F for 20-25 minutes until the filling is solid and pie is light brown
