Finnish Pancakes Recipe (Letut)

Finnish pancakes are very tasty so you might need to double or triple this recipe! These really are thin, as thin as you can make them, so there is a big difference to American pancakes. These crepe-like pancakes can be done in a frying pan or even on a grill, on top of pizza stone for example.
Don't mix these with Finnish oven pancake, that is another yummy recipe..
Finns don't usually eat pancakes for breakfast, it's more like a snack between meals or a tasty dessert after a lighter meal.
Finnish pancakes are enjoyed by everyone from kids to grandpa's like we Finns say. Sprinkle some sugar on top or spread your favorite jam. For extra treat, you can add whipped cream or ice-cream.

Traditional Finnish Pancakes are easy to make and so tasty that they are the favorite of most Finns.
Most often the filling of hot pancakes in Finland is strawberry jam, apple jam or raspberry jam. You can also add whipped cream or make a straightforward traditional choice and just sprinkle some sugar on top.
Only difficult thing in making these is to keep other family members not eating them before you get yours! So you might want to double or triple this recipe..
2 cups milk
1-2 eggs (1 if big, 2 if small)
1 cup all-purpose flour
½ teaspoon salt
1 tablespoon sugar (or 1 teaspoon if making spinach pancakes)
(150 g - 200g fresh spinach, cooked, if making green spinach pancakes)
Butter for frying
Mix milk and eggs, beat them well
Add the flour, bit by bit
Add salt and sugar, mix
Leave the batter for 30 min to thicken
Mix the batter once again
Heat up a frying pan
Add teaspoon of butter to the pan, move it
Add a small ladle of the pancakes batter to the pan, turn the pan to let the batter cover as wide area as possible (start small to see how it goes)
Let the pancake fry for a few minutes, then turn it
When both sides are nice and brown, place the pancake to a plate, cover by another plate to keep them hot.
Add butter to the pan and make the next pancake.
When all pancakes are fried, add sugar or jam in between and enjoy!
If you have a special pancakes pan for smaller pancakes, you can sure use it for this recipe to make small pancakes.
This recipe makes 12-14 pancakes.
If you are making spinach pancakes, cook first the spinach and chop it very small (e.g. mix with milk with a mixer) and then continue normally, except reduce the amount of sugar. Finnish Spinach pancakes are most often eaten with lingonberry jam.
