Finnish potato salad and wieners (Perunasalaatti ja nakit) recipe

One of the traditional dishes for May Day (1st of May in Finland) called Vappu, many Finns enjoy potato salad with wieners. Or herring (silli in Finnish).
This is a cold potato salad, which is handy for any party, because you can prepare it well in advance, it tastes great and suits many type of meat, sausage or fish dishes.
Potato salad is perfect company also for grilled meat. And if you prepare it with new potatoes, it is extra tasty!
Remember to refrigerate the salad for 24 h to let the ingredients grow well together.
Potato salad is also popular option in any buffet or salad table, if you are making several salads.

Traditional Finnish potato salad is a tasty vegetarian salad which is enjoyed cold.
Perfect companion for fish, meat or sausages.
Remember this potato salad when having summer barbecue!
1 ½ lb potatoes
Half a cup pickles
3 tablespoons capers (not mandatory)
1 sweet onion (or red onion)
1 greek yoghurt (4-6 oz)
3-4 tablespoons mayonnaise
1 tablespoon lemon juice
½ teaspoon black pepper
Pinch of salt
½ teaspoon garlic powder
1 teaspoon mustard
Some fresh herbs, e.g. pea shoots, chives, dill or parsley, on top
Peel and dice the potatoes
Boil potatoes (about 20 min) in salted water
Remove water and let the potatoes cool down
Chop the pickles and onion, capers and potatoes, mix
Make the salad dressing: combine yoghurt, mayonnaise, mustard, lemon juice, salt, pepper, garlic powder and mix
Mix the salad and dressing, let cool down in a fridge for 24 h (well you can eat it now too, but it will be even better next day)
Boil the wieners (hot dogs, frankfurters) in water and serve with cold salad and mustard or ketchup.
If you like apples, this is a great salad to add half an apple, just peel it, dice it and add with other ingredients.
