Finnish Salmon Soup is easy to make and so delicious that you will want to make it again soon.

This authentic recipe for salmon soup takes only 30 minutes to prepare.

This hearty soup from Finland has salmon chunks that melt in your mouth and potatoes and root vegetables create a full symphony in your mouth.

Ingredients

  • 1 lb salmon (preferably with skin on)

  • 2 cups water

  • 3 large potatoes (firm type, good for cooking)

  • 3 carrots

  • 1 onion

  • Salt

  • Fish stock cube

  • 8 allspice, whole

  • 2 cups milk

  • 1 tablespoon butter

  • Dill, fresh or dried

Directions

  1. Peel and cut the potatoes to similar size pieces to cook them evenly.

  2. Peel and cut the carrots to small chunks.

  3. Add the potatoes and carrots to boiling water (2 cups of water).

  4. Add the spices: fish stock cube, allspice peppers and salt.

  5. Chop the onion to small pieces and add it to soup after approx. 10 min. of cooking.

  6. Wash the salmon with water and remove the possible fish bones, scissors are handy for this.

  7. Remove the skin of the salmon and cut it to chunks (e.g. about 1 inch pieces)

  8. Add milk and butter to the soup.

  9. When potatoes are almost cooked, add the salmon chunks to the soup and let it simmer for
    5-10 minutes, until the salmon is cooked, and stir
    occasionally.

  10. Add dill, a generous amount (e.g. ½ cup) if you have fresh, about 2 teaspoons if it is dried.

  11. Check the taste, add salt if needed.

This easy recipe to make Finnish salmon soup (lohikeitto in Finnish) takes only 30 minutes and it makes a great lunch and it's perfect to enjoy with rye bread. 

In Finland, people enjoy Salmon Soup year round. It's a healthy soup, and you don't need heavy cream to make it. Of course instead of milk you can use cream, it will make the soup even thicker, but this authentic recipe uses milk and butter. Well - cream is kind of the same thing as milk and butter, so there we go.

This hearty dish has fresh dill - unfortunately where I live, fresh dill is not available. I have started to grow some dill, so I hope to update the picture when my dill has finally grown!
