Finnish Sausage Soup is a hearty and flavorful everyday soup from Finland. 

This soup is easy to prepare, just chop all the ingredients, boil the potatoes, and while they are boiling, fry the onion and the sausages and add them to the same pot.

This Finnish dish is a typical lunch dish and enjoyed with rye bread. You can even dip the buttered and sliced rye bread in the soup like my dad always did!

Ingredients

  • 4 cups water

  • 1 teaspoon salt

  • 6 potatoes

  • 3 sausages (I had bockwurst, you can use other) about 0.7 lb

  • 2-3 carrots

  • 1 rutabaga (also known as swede)

  • 1 parsnip

  • 1/2 leek

  • ½ onion

  • Butter for frying

  • 10 allspice, whole

  • 2 bay leaves

  • 2 tablespoons tomato sauce (use those last bits of ketchup)

  • Parsley, fresh & chopped or dried

Directions

  1. Add the water to a pot, bring to boil and add salt.

  2. Cut the potatoes and other vegetables to smaller size pieces.

  3. Add potatoes and rutabagas to your pot, they take the longest to cook.

  4. Add allspice and bay leaves.

  5. After 10 min, add rest of the vegetables.

  6. Fry the sausages and onions, and add them to the soup when all vegetables are almost ready.

  7. Let simmer until the potatoes and vegetables are soft (total about 20-25 min)

  8. Add chopped fresh parsley on top ot the soup and serve.

I calculated my soup ingredients and this soup I made cost less than 5 euros (it serves 4), even though I used more expensive sausages. You can make it even cheaper soup by using e.g. hotdogs / frankfurters or other small sausages that you find with a good price!
