Finnish Spinach soup is healthy and filling - but it's also very tasty. 

Perfect smooth combination of sweet and savory. 

That is why it's my favorite soup of all Finnish cuisine.

Surprise your family or guests with this soup! My guests wanted to lick the plate 😂

The egg is usually eaten bite by bite, breaking it with spoon and enjoying the small bite with soup.

Ingredients

  • 1 or ½ egg per person

  • ~7oz spinach, frozen (you can also use fresh, you'll need less)

  • 1/2 stick butter

  • 1/4 cup all-purpose flour

  • 2 cups water

  • 1 vegetable cube

  • Pinch of white pepper

  • 1 teaspoon salt

  • 1/2 teaspoon sugar

  • 1/2 cup milk

  • (Pinch of nutmeg, ground)

Directions

  1. Boil the eggs to your liking, about 8-10 minutes

  2. Thaw the spinach in microwave

  3. Add butter to your soup pan

  4. Add flour, mix it with butter, don’t let it get brown

  5. Add water a bit by bit, while mixing

  6. Add stock cube and spinach

  7. Add white pepper, salt, sugar and nutmeg (optional)

  8. Add milk and stir the soup

  9. Let the soup boil for a few minutes

  10. Take the pan off the heat and use electric mixer to smooth the soup and chop the spinach to tiny pieces

  11. Bring to boil one more time and check the taste, add spices when needed

  12. Serve with hard-boiled egg halves.

Finnish Spinach Soup is a surprising soup! It combines sweet and savory in a wonderful way.

Many foreigners that I served this spinach soup have wondered the added boiled egg but it makes this soup a great lunch option that you will not be hungry for a long time.

This soup is easy to make with fresh or frozen spinach. Chopped and frozen is used most often in Finland, well, sure because the summertime is short in Finland.

And healthy - who would not want to have a healthy soup? All that spinach is good for your health.

Additionally, if you have leftover spinach soup, you can easily make spinach pancakes, just add all-purpose flour and fry the pancakes in butter, super tasty!

Yes, many have e.g. school-related memories of badly prepared dishes.. 😂 I have always loved this soup and all foreigners I’ve cooked it have loved it too. So maybe it’s time to take another taste! Sometimes food you did not like as a kid tastes great when adult (e.g. olives)

That’s the second most disgusting soup ever. The first place of course goes to the kesäkeitto (summer soup). If I knew that those things were served for school lunch, I started feeling sick before I even left home.
