Finnish Tiger Cake (Tiikerikakku)

This is a wonderful traditional cake from Finland. This type of coffee cakes are called "dry cakes", "kuivakakku" in Finnish, even though they are not dry at all.
This cake is easy to do and looks awesome!
The two colors of tiger cake come from vanilla and chocolate and they melt in your mouth, plenty of butter makes sure of that!
Tiger cake is a perfect addition to any coffee table and you can freeze it in case you want to be prepared for surprise guests.

Tiger cake is a delicious treat for your coffee table!
This traditional Finnish cake is enjoyed by the kids and adults alike.
The chocolate stripe makes every bite a bit different!
I used there a cake tin of 4 cups (1 litre). This volume is a bit smaller than usual cake tin, but if I would have beaten the eggs and sugar, I think a bigger size cake tin would have been needed.
2 sticks butter (200 g)
¾ cup sugar
2 eggs
1 ¾ cup all-purpose wheat flour
2 teaspoons baking powder
2 ½ teaspoons vanilla sugar (or ¾ teaspoon vanilla extract and 3 teaspoons sugar)
¼ cup milk
2 ½ tablespoons dark cocoa powder
3 tablespoons heavy cream (or milk)
Butter and breadcrumbs (or semolina) for the cake tin
Beat the melted butter and sugar (or just mix them well).
Add the eggs and mix.
In a separate bowl, mix the dry ingredients: Measure the flour and mix baking powder and vanilla sugar to it.
Add the dry ingredients and mix.
Add the milk and mix again.
Take ⅓ of the dough to a separate bowl.
Mix cream and cocoa powder and add them to the ⅓ of the dough. This will be the stripe in the middle of the cake.
Butter the cake tin and sprinkle it with breadcrumbs so that the cake does not stick to it.
Add half of the blond dough to the bottom of the tin.
Add the chocolate stripe dough.
Add the rest of the dough on top.
Bake in 340 °F for 50 minutes. If the top tries to get too brown too soon, add a piece of baking paper on top or lower the temperature. Test the cake is ready by sticking a toothpick to it, if the dough does not stick to it, it’s ready.
Let the cake cool down and enjoy!

This is a handy option when you want to enjoy only a couple of pieces from the freezer.
You can freeze the whole cake or freeze it in portions.
Let the cake thaw on the table without warming it up. Great treat for surprise guests!
